Im not sure if anyone has ever seen a stream of how they put these events together. As far as i know they do have a tournament client in which they use for tournament games. The difference between this and the original is unknown to me but i think a simple email to riot would get you the answer. Whether or not they have LAN functionality is beyond me. Though i do know that it is generally a patch or 2 behind the current patch

Yeah they use older patches for fairness. Some patches come out just before the comp and EU always patches after NA.
